flaminko,

I'm quite new to teaching interview lessons as well. However, one thing that seems to be working well for me is having my students interview each other. Each student chooses 3-6 questions from the list provided on my blog. I only have four in the class so I'll have 3 interviewers and one interviewee. Each interviewer asks a question and the interviewee answers. I give feedback to the interviewer and also encourage follow up questions from the interviewers, while also asking my own.

We've also developed a rubric that rates the interviewees and gives them a score. I'll be posting the rubric shortly but it's something that you could easily design. We made one that rates posture/eye contact, overall quality of answer, grammar ability, fluency, etc.
